SWEET POTATO PIE

Ingredients
- 11/4 cups firmly packed brown sugar
- 4 medium (11/2 cups) cooked, mashed sweet potatoes
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 cup evaporated milk
- 3 eggs
- Sweetened whipped cream, if desired
- Pastry for 9-inch pie crust
- Pre-heat oven to 350 degrees.
- Combine all filling ingredients except evaporated milk, eggs and whipped cream in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Reduce speed to low, add milk and eggs. Beat until well mixed.
- Pour filling into crust. Bake 50 to 60 minutes or until knife inserted in center comes out clean. If crust is browning too quickly, cover edge with 2-inch strip of aluminum foil. Cool completely.
- Garnish with whipped cream, if desired. Store refrigerated
