Ingredients

  • 3 to 4 Tbsp butter
  • 1/2 lb shallots, whole, or halved if large
  • 6 to 8 leeks, white part only, split and rinsed well, cut in 1" rounds
  • 1 large yellow onion, cut in wedges
  • 1 large red onion, cut in wedges
  • 2 cloves garlic, minced
  • 12 pearl onions
  • 2 cups heavy cream
  • Salt and pepper
  • Grated nutmeg
  • 1/4 tsp minced parsley
  • 3 Tbsp fresh bread crumbs

Preparation

Step 1

Melt butter in large skillet or Dutch oven. Add garlic and onions, except the pearl onions. Toss gently over low heat, until onions are softened, around 20-30 minutes. Do not brown.
Drop pearl onions in boiling water, simmer for 5 minutes. Drain. Make a slit across root and and onion will slip out of skin. Add to cooked onions.
Add the cream to onions. Bring to a boil and simmer until cream is reduced and thickened, about 10-15 minutes. Season to taste with salt and pepper. Stir in parsley.
Spoon into buttered shallow dish. Sprinkle with breadcrumbs. Bake at 475 for 15 minutes or until golden brown.
