Ingredients

    large baking potatoes

  • 1

    cup milk

  • 1

    cup sharp cheddar cheese, diced

  • 1

    tsp salt

  • 1/2

    tsp white pepper

  • 1/2

    tsp Paprika

  • 1

    green onion, chopped

Directions

1. Scrub potatoes well. Punture tops with a knife and cook on high in the microwave for 10 min. Check for doneness. Microwave longer if necessary, until potato pulp is softened. 2. Preheat oven to 350 degrees. Remove skin from top half of each potato. Scoop pulp into a mixing bowl, allowing 1/2" wall of pulp to reamin on the sides and bottom of each potato. 3. Mix pulp with milk, cheese, salt and pepper. Spoon mixture into potatoes. Sprinkle paprika over the top. Bake in oven for 30 min. Sprinkle green onions on top.
