Twice Baked Mashed Potatoes

A perfect way to use up leftover mashed potatoes, or a good reason to make a big batch! These seasoned and spiced up mashed potatoes will become a family favorite!

Ingredients
- 1 1/2 cups chopped onion
- 1 1/2 cups chopped green pepper
- 3 tablespoons vegetable oil
- 12 cups mashed potatoes (prepared with milk and butter)
- 3 cups shredded Cheddar cheese, divided
- 3/4 cup crumbled cooked bacon
- 1 tablespoon salt
- 1 1/2 teaspoons pepper

Preparation
Step 1
In a small skillet, saute onion and green pepper in oil until tender.
In a large bowl, combine the onion mixture, mashed potatoes, 1/2 cup cheese, bacon, salt and pepper. Spoon into a greased 2-qt. baking dish.
Sprinkle with remaining cheese.
Bake, uncovered, at 350 degrees F for 20-25 minutes or until cheese is melted.
