Stuffed Baked Fish

Ingredients
- 1 dressed pike or carp, 4-5 lbs.
- s&p
- 1/3 c. butter
- 2 onions
- 2 celery stalks, chopped
- 1/2 c. chopped parsley
- 1 c. dried, chopped apple
- 1 c. chopped mushrooms
- 1 c. water or white wine
- 3 c. dry bread cubes
- 2 tsp. sugar
- 2 tsp. lemon juice
- 3 beaten eggs
- butter, melted

Preparation
Step 1
Sprinkle fish w/ s&p. Set aside 2 hrs. Saute onion in butter till golen; add celery, parsley, apples, mushrooms; fry for 2 more mins. Add water or wine, bread crumbs, sugar, lemon juice, & eggs. Mix well. Fill fish cavity w/ stuffing. Close & secure w/ skewers or toothpicks. Place fish in roasting pan & drizzle w/ melted butter. Bake @350 for 40 min. or till fish flakes easily.
