Ingredients

    can black beans (drained - approx 15oz can)

  • 1

    red bell pepper (diced)

  • 1

    green bell pepper (diced)

  • 1

    yellow bell pepper (diced)

  • 1/2

    cup red onion (diced)

  • 1

    clove garlic (minced)

  • 1

    can corn (drained - approx 15oz can)

  • 1

    teaspoon cilantro (chopped)

  • 1/4

    cup olive oil

  • 4

    tablespoons red wine vinegar

  • 1

    teaspoon lime juice

  • 1

    head lettuce (or1 bag lettuce leaves)

  • 1

    dash salt & pepper (or to taste)

  • 1

    bag tortilla chips

Directions

In a bowl, add diced peppers, onion, corn, garlic and cilantro, tossing to combine. Add olive oil, vinegar, lime juice, salt and pepper to taste, tossing well. Add drained black beans and mix well. Serve over bed of lettuce with tortilla chips on the side. Jan’s Note: For the corn, I used 1 large fresh ear of corn and grilled and slightly blackened the kernels for that nice southwestern flavor. Also, I had a fresh-roasted diced green chili in the refrigerator so that went into the Black Bean Salad, too. Delicious!
