Pineapple Upside Down Pancakes

  • 2 c flour
  • 2 tsps. baking powder
  • 1 1\2 tsps. baking soda
  • 1 \2 tsp. salt
  • 1 \4 c sugar
  • 1 1\2 c milk
  • 1 \2 tsp. vanilla
  • 1 \2 c butter
  • 1 \4 c brown sugar
  • 1 1\2oz spiced rum
  • 120oz can pineapple rings with juice
  • Maraschino cherries



Step 1

Ina lg. bowl add flour, baking powder, making soda, salt & sugar
Mix until combined
Create a small well in the middle of the dry ingredients
Add milk, half of reserved pineapple juice, 1\4 c melted butter & vanilla
Whisk until ingredients combine to form a lumpy batter, set aside while you make pineapple syrup
Add remaining 1\4 c butter to small saucepan over medium heat, once butter melted add brown sugar & remaining pineapple juice
Bring ingredients to a boil allowing for the sugar to melt & carmelize
Once mixture is smooth & has the consistency of syrup, remove from heat & set aside
Melt a small amount of butter in a frying pan over medium heat & add a slice of pineapple
Cook pineapple ring until lightly caramelized on one side, about 2 minutes before flipping
Once flipped fill the core of the pineapple with 1-2 maraschino cherries before pouring about 1/4 c pancake batter
Cook until edges start to set & the top begins to bubble, about 2 minutes, cook for an additional90 seconds to 2 minutes until cooked through
