Flat Belly - Spicy Baked Chicken w/Squash and Walnuts

Ingredients
- 1 1/2 tbsp olive oil
- 2 tbsp water
- 2 tbsp packed dark brown sugar
- 1 1/2-2 tsp ground ancho chile pepper
- 1 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 butternut squash, peeled, seeded, and cubed
- 4 boneless, skinless chicken breast halves (4 oz each)
- 1/2 lb small think skinned potatoes, quartered
- 1 lg sweet white onion, cut into thin wedges
- 1/2 cup walnut halves, coarsely chopped

Preparation
Step 1
1.) Preheat the oven to 375 degree F. Coat a roasting pan or large casserole with olive oil spray.
2.) Combine the oil, water, brown sugar, pepper, cumin, oregano, and salt in a small bowl. Brush the chicken with the mixture and place it in the roasting pan. Arrange the squash, potatoes, and onion in the prepared pan and pour remaining oil-spice mixture over. Toss with clean hands until evenly coated.
3.) Bake, uncovered, for 40 minutes or until the squash and potatoes are tender. Add the walnuts and bake for 10 minutes longer or until a thermometer inserted in the thickest part registers 165 degree F.
