Slow Cooker Turkey Taco Soup

Ingredients
- 1 tbsp. olive oil
- 1 lb. ground turkey
- 1/2 yellow onion, diced (about 1 cup)
- 1 tsp. chopped garlic
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. ground smoked paprika
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cayenne
- 1/2 cup store bought salsa
- 4 cups chicken broth
- 1 15 oz. can black beans, drained and rinsed
- 1 14 oz. can white beans, drained and rinsed
- 2 cups fresh or frozen corn
- 1/2 cup grated monterey jack cheese
- 1 avocado, peeled, pitted and diced , for garnish
- sour cream, for garnish
- crushed tortilla chips, for garnish

Step 1
In a large skillet set over medium heat, add the oil, turkey, onion and garlic and stir, breaking meat up with a wooden spoon until cooked through and lightly browned, about 8 minutes. Transfer to a slow cooker.
Add spices and salsa and stir. Add broth and beans , cover and cook on low heat for 6-7 hours. Just before serving, turn heat to high, stir in corn, cover and cook until hot, about 15 minutes.
Serve soup in warm bowls alongside bowls of cheese, avocado, sour cream and tortilla chips to garnish as desired.
