Almond, Orange and Cardamom Biscotti

Recipe yields 40 biscotti.....If you have a biscotti pan, you can place the entire mixture in the pan and bake.

Ingredients

  • 2 eggs
  • 2/3 cup firmly packed soft brown sugar
  • 1 cup self-rising flour
  • 1 1/4 cups almonds
  • 1 Tbsp finely grated orange zest
  • 1/4 tsp ground cardamom

Preparation

Step 1

1. Preheat the oven to 315 degrees F. Line a baking tray with waxed paper.
2. Beat the eggs and sugar in a bowl with an electric mixer, until pale and creamy. Sift the flours into the bowl, then add the almonds, orange zest and cardamom and mix to form a soft dough.
3. Turn ou the dough onto a lightly floured surface. Divide the mixture into two portions, shaping it into two 8x2 inch loaves.
4. Bake for 35-40 minutes or until lightly golden. Transfer to a wire rack to cool. Cut the loaves into 1/2 inch diagonal slices with a large serrated bread knife. The biscotti will be crumbly on the edges, so work slowly, and, if possible, try to hold the sides as you cut.
5. Arrange the slices on cookie sheets in a single layer. Return to the oven for 10 minutes on each side. Don't worry if they don't seem fully dry, as they will become crisp upon cooling. Allow the biscotti to cool before serving

Makes 40 biscotti.
