Ingredients
- 6 tbsp olive oil, divided
- 1 medium size yellow onion, chopped
- 1 (1lb) pkg orzo
- 2 15oz cans chickpeas, drained and rinsed
- 2 cups diced cucumbers
- 2 cups sliced cherry tomatoes
- 1/3 cup fresh lemon juice
- 2 tsp kosher salt
- 5 oz baby arugula
- 2 oz feta cheese, crumbled

Preparation
Step 1
heat 1/2 tbsp of olive oil in a medium skillet over medium heat. add onion: cook, stirring often, until translucent and soft, 8 to 10 mins. remove from heat, and cool 20 mins. cook orzo according to package directions. drain pasta, and place in a large bowl. stir in onion, chickpeas, cucumbers, cherry tomatoes, lemon juice and salt and 4 tbsp olive oil. gently fold in arugula. drizzle with remaining 1 1/2 tbsp oil and sprinkle with feta.
