Ginger Lime Chicken Sandwiches

Ingredients

  • 2 skinless, boneless chicken breasts halves
  • 1/2 t coarse salt
  • 1/4 t black pepper
  • 1/4 C chopped cilantro
  • 2 t shredded lime peel
  • 3 T lime juice
  • 2 T olive oil
  • 2 T honey
  • 1 - 2 T grated fresh ginger
  • 1/4 C mayonnaise
  • 1/2 t garlic chili sauce
  • 4 hamburger buns
  • lettuce leaves

Preparation

Step 1

In med bowl whisk together cilantro, lime peel, lime juice, olive oil, honey & ginger. Pour over chicken & marinate 1-4 hrs in the refrigerator .

Halve chicken breasts horizontally. Sprinkle with salt & pepper and marinate

In small bowl combine mayonnaise, garlic chili sauce & garlic. Cover & chill.

Preheat grill. Grill chicken over med heat 7-8 min. Brush cut sides of buns with olive oil & grill 10 sec.

Spread buns with mayonnaise mixture, add chicken & lettuce.
