Grilled Soy-Glazed Pork Chops

Ingredients

  • 4 bone-in pork chops
  • 1 1/2 t. kosher salt
  • 1/2 t. freshly ground pepper
  • 1/4 c. soy sauce
  • 1 T rice wine vinegar
  • 1 T. fresh lime juice
  • 1 t. light brown sugar, packed
  • 1/4 t. sriracha, optional

Preparation

Step 1

Light coals for a charcoal grill or preheat gas grill to medium.
Season both sides of the chops evenly with salt and pepper.
Let rest at room temperature for 20 minutes.
In a small bowl or measuring cup, mix together the soy sauce, vinegar, lime juice, brown sugar, and sriracha, if using.
Place the chops directly over the coals and cook covered, for 3 minutes.
Turn and brush with the soy mixture, cover, and cook an additional 3 minutes.
Continue to turn the chops and brush with the soy mixture every 3 minutes until cooked through about 10-21 minutes depending on how thick the chops are. They should reach internal temperature of 150(closest to the bone).
Remove from heat, brush once more, and let rest 10 minutes before serving.
