Banana Cupcakes with Maple Icing

Ingredients
- 1/4 pounds cream cheese
- 1/4 cups maple syrup (+ 2 tbsp)
- 1 teaspoon lemon zest
- 2 1/4 cups self rising flour
- 1/3 cups all-purpose flour
- 1/2 teaspoons baking soda
- 1/2 cups brown sugar
- 4 1/4 ounces bananas (overripe, mashed)
- 2 eggs (lightly whisked)
- 1 cup buttermilk
- 1/3 cups vegetable oil
- 1/3 cups walnuts (chopped)

Preparation
Step 1
For the maple icing, beat cream cheese, 2 tbsp maple syrup and lemon zest in a small bowl until light and fluffy. Set aside.
Preheat oven to 400°F. Grease a 12-cup muffin pan. Sift dry ingredients into a large bowl. Add remaining maple syrup and banana. Add eggs, buttermilk and oil and mix until just combined. Transfer to prepared pan. Bake for 20 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
Frost cupcakes with maple icing. Sprinkle with walnuts. Serve.
