Ingredients
- Dressing:
- 5 portaballo mushroom caps
- 2 ripe avocados
- 3 small cukes
- 1 pint tomatoes
- \1/4C olive oil
- 1 glove garlic
- 1 TB lemon juice
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt

Preparation
Step 1
1. Preheat oven to 425. line baking sheet with parchment paper
2. Clean out the mushroom caps. Sprinkle with olive oil, salt, pepper. Roast 10-15 minutes .
3. Remove from oven and slice.
4. Peel cukes and slice. Combine everything and add dressing.
