SWEET ASIAN SALMON

Ingredients
- 3 Tbs. hoisin sauce
- 2 Tbs. reduced-sodium soy sauce
- 2 Tbs. rice-wine vinegar
- 1 tsp. Sriracha
- 2 tsp. honey
- 2 tsp. minced fresh ginger
- 2 tsp. minced fresh garlic
- 8 thin orange slices or one can mandarin oranges
- 4 baby bok choy, trimmed and quartered lengthwise and/or asparagus
- 4 skinless center cut salmon fillets (6 oz. each)
- 1 diced tomato
- salt and fresh ground black pepper to taste
- Toasted sesame seeds
- Thinly sliced scallions
- Cooked jasmine rice or rice noodles, for serving

Preparation
Step 1
1. Preheat oven to 425 degrees. Prepare four parchment hearts or pockets
2. In a small dish, combine hoisin sauce, soy sauce, vinegar, Sriracha, honey, ginger and garlic.
3. Arrange a layer of orange slices, than boy choy/asparagus over one half of each piece of paper. Place salmon on top: season with salt and pepper. Divide sauce over salmon; seal packages.
4. Arrange packets on baking sheets. Bake 15 - 18 minutes turning pan have way through. Transfer packets to plats with wide spatula. Slit tops; gently open. Finish with sesame seeds and scallions
5. Serve with rice or rice noodles
