Honey Glazed Banana Cake

  • 2 c flour
  • 1/2 c sugar
  • 1 T baking powder
  • 1/2 c fat-free milk
  • 1/4 c vegetable oil
  • 2 eggs
  • 1 t vanilla
  • 1 c mashed bananas (2-3)
  • 1/4 t cinnamon
  • 1/4 c honey or maple syrup

Step 1

1. Preheat oven to 350. In a bowl stir together flour, sugar, baking powder and 1/2 t salt. In a separate bowl blend milk, oil, eggs and vanilla until smooth; stir in bananas.
2. Add mixture to dry ingredients and stir until just moistened.
3. Pour into 9" round cake pan sprayed with nonstick cooking spray.
4. Bake for 25 minutes or until toothpick inserted in center comes out clean.
5. Cool in pan for 10 minutes. Turn out onto cooling rack. Turn right side up. Combine honey and cinnamon. Using a fork, prick holes in top of cake. Drizzle honey evenly over warm cake. Serve warm
