Shepherd's Pie With Loaded Potato Topping

Ground beef filling with loaded potato filling.

Ingredients
- GROUND BEEF FILLING
- 1 pound lean ground beef
- 1 cup mushrooms, sliced
- 1/2 cup onions. chopped
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 package brown gravy mix (or 1-1.5 cup of your own beef gravy)
- LOADED POTATO TOPPING
- 2 pounds potatoes pared and diced
- 4 tablespoons butter
- 1/2 cup sour cream (or more depending on your desired consistency)
- 4 green onions, chopped
- 1/2 cup cheddar cheese, shredded (or more if you wish)
- 4 strips bacon, crisp-cooked and diced
- Water, for potatoes
- 1 teaspoon salt

Step 1
In a large skillet over medium high heat, brown the ground beef. Drain well. Set aside.
In the same pan, cook the onion and mushrooms until the onions are translucent.
return the cooked beef to the pan and add the brown gravy.
Place the diced potatoes in a 2 quart pan. Fill pan with water, add 1 teaspoon salt and cook until potatoes are tender.
Mash potatoes, adding butter and sour cream, until potatoes are smooth .
Stir in cheese, bacon and green onion until incorporated.
PREHEAT OVEN TO 350 DEGREES
Place ground beef mixture in a 9-inch deep dish pie or four individual ceramic dishes.
Top with the mashed potatoes, covering the meat entirely.
Bake at 350 degrees or until potatoes begin to brown around the edges and the peaks.
Remove rom the oven and serve immediately.
