Ingredients
- 3 pounds potatoes (Yukon gold)
- 3 tbs butter
- 1/2 cup milk
- 1/2 cup grated parmesan cheese
- 2 eggs, beaten
- salt and pepper to taste
- bread crumbs
- mozzarella, shredded or thinly sliced

Step 1
Preheat oven to 375. Boil potatoes, in jackets, until tender. Peel, and mash or force through a ricer. Add butter, milk, grated cheese, eggs, salt and pepper. Beat until creamy and light. Butter an 8 inch pie plate and sprinkle with bread crumbs. Arrange half of the mashed potatoes in a layer in prepared pie plate, cover completely with mozzarella slices and top with remaining mashed potatoes. Sprinkle with bread crumbs and dot with butter. Bake until top is golden town brown and crusty.
** This taste better the next day. May be good to make a day ahead
