Ingredients

  • Dressing:
  • 1 pkg (10 oz) fresh spinach torn
  • 1 pkg fresh sliced mushrooms
  • 1 pkg sliced bacon (or turkey bacon) cooked and crumbled.
  • 1 cup (4 oz) shredded cheddar cheese
  • 3 hard boiled eggs, chopped
  • 3 scallions, sliced
  • (* I also use marinated mushrooms too, just a few)
  • 1 cup ketchup
  • 3/4 cup vinegar
  • 3/4 cup olive oil
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 tsp worcestershire sauce
  • (* Balsamic Dressing is mostly what I use, less fuss.)

Step 1

In a large Salad bowl, combine the first six (or seven) ingredients. Then make the dressing and shake until the sugar is dissolved. Drizzle over salad and toss to coat. Serve immediately.
