Ingredients
- 5 stalks of rhubarb
- 1/4 - 1/2 C sugar
- prosecco ( Italian sparkling wine)
- pinch of sea salt
- whole - half paddle full of simple syrup with vanilla bean soaking in it

Preparation
Step 1
combine rhubarb, sugar and salt. pour in prosecco until rhubarb is just covered. cook until boiling. pour into blender with simple syrup to combine. pour into ice cream maker.
