lb thick-cut bacon (about 6 slices)
cup brown sugar
TBSP Dijon mustard
TBSP red wine
tsp cayenne pepper (I add more)
Heat oven to 350 degrees. LIne baking sheet with foil. Place single layer of bacon on pan and bake until lightly browned and crisp (15-20 minutes) While bacon cooks mix remaining ingredients together. Drain fat from cooking bacon. Brush bacon strips with brown sugar mixture (both sides). Return to oven and cook another 10 minutes or so until glaze is dark and bubbling. Remove bacon from oven and place on cooking rack to cool. Cut each strip in thirds.
