Lemon Crisp Cookies

Ingredients

• 3 1/2 cups flour
• 1 teaspoon baking powder
• 1 1/2 cups butter
• 1 cup sugar, plus extra to roll cookies in
• 1 package lemon jello
• 1 egg
• 1 teaspoon vanilla

Preparation

Step 1

preheat oven to 400*
mix flour and baking powder in medium bowl
in large bowl, cream together butter, sugar and jello
beat in egg and vanilla
add flour mixture in three portions, mixing will after each addition
roll dough into 1 inch balls and roll in sugar
flatted with bottom of glass and place on ungreased baking sheet
bake 7 to 8 minutes or until lightly browned
over baking will hide the pastel jello coloring
remove from baking sheets and cool on wire rack
