Soy Balsamic Thighs with Asparagus

  • 3 T balsamic vinegar
  • 4 T low sodium soy sauce
  • 2 T minced garlic
  • 3 T fresh parsley
  • dash pepper
  • 1/4 cup olive oil
  • 6 boneless chicken thighs
  • bundle asparagus
  • box rice pilaf

Step 1

ziplock bag: combine vinegar, soy sauce, garlic, parsley and pepper, mix well. add olive oil to bag. add thighs and coat well. marinate in fridge overnight.
preheat oven to 400 degrees. put chicken and marinade on pan with heavy aluminum foil under for easy cleanup. bake 20-25 minutes till chicken cooked.

take chicken out of oven and turn. put asparagus in and coat with sauce. put pan on top rack of oven and put on broil. broil chicken and asparagus about 6-7 minutes.

cook rice pilaf according to directions as making chicken. serve remaining glaze on the side.
