Ingredients

  • 14 qt Tomatoes
  • 7 medium onions
  • 1 stalk celery
  • 14 sprigs parsley
  • 3 bay leaves
  • 14 Tsp flour
  • 14 Tsp butter
  • 3 Tsp salt
  • 8 Tsp sugar
  • 2 tsp pepper

Preparation

Step 1

1. Wash & cut up tomatoes
2. Put tomatoes, onions & celery in blender & puree.
3. Add bay leaves & parsley & cook to boiling.
4. After boiling 5 to 10 minutes, put through sieve to eliminate skins & seeds.
5. Put back in pan. Mix butter & flour into paste.
6. Thin with hot soup & add to soup. To prevent lumps in soup put this paste mixture through the sieve also.
7. Stir constantly to prevent burning.
8. Add salt, sugar, pepper.
9. Put in jars & seal.
10. Boil in water bath for 15 minutes.
