Escarole Soup with Meatballs

Ingredients

  • Meatballs:
  • 1/2 lb lean ground beef
  • 1 clove garlic, pressed
  • 1 1/2 Tbsp Parmesan cheese
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Soup:
  • 2 cups chicken broth
  • 2 cups beef broth
  • 1 Tbsp ketchup
  • 1 head escarole, chopped
  • 1 onion, diced
  • 1 potato, peeled and diced
  • 1 Tbsp minced fresh parsley

Preparation

Step 1

Mix together all ingredients for meatballs and form into 3/4 inch balls. Set aside.
In a saucepan, bring the broths and ketchup to a boil. Add the meatballs and cook 10 minutes. Add the remaining ingredients, cover and cook another 30 minutes.
