Sausage Won-Ton Cups

These delicious sausage, cheese and pepper stuffed won-tons are perfect for a breakfast buffet, but the flavors can easily be devoured as a game-day snack. The won-ton cups are partially baked beforehand and the filling can be premixed, making assembly and heating a snap. Make this recipe your own by substituting your favorite cheese, adding sauteed mushrooms, jalapenos, olives, tomatoes, or whatever your family enjoys.

Ingredients

  • 1 package won-ton wrappers
  • 1 lb pork sausage, mild or hot, cooked and drained
  • 1 red pepper, chopped
  • 4 green onions, sliced thinly, divided
  • 1 1/2 - 2 cups shredded cheddar cheese
  • scant 1/2 cup Ranch dressing

Preparation

Step 1

Prepare sausage and mix with the remaining ingredients. Firmly press won-ton wrappers into a mini muffin pan. Bake at 350 for 5 minutes. Remove from oven and add about 2 tablespoons of filling to the partially baked cups. Bake for 5 more minutes until hot and bubbly. Garnish with remaining green onion slices. Serve immediately.

This recipe makes anywhere from 40-55 cups, depending on how much filling you press (or don't press) into the cups. For buffet style serving, I tend to fill them on the lighter side and use more cups. For family servings or as an appetizer, I tend to fill them more generously.

I have reduced the pork to half a pound and kept the remaining ingredients the same, maybe reducing the dressing slightly, and was able to make about 28 cups.
