Pork Roast Sandwich {Cheese-Steak Style}

Use your left over roast meat to make an indulgent left-over sandwich that may be more enjoyable the second time around! Those hoagie buns from Sam's Club make awesome grilled sandwiches and this could be my favorite one yet! We spiced ours up with chopped jalapenos for the perfect kick. A mayo-slathered grilled bun topped with succulent gravy covered shredded pork, topped with sauteed peppers and onions, then covered with melted cheese was completely glutenous awesome!

Ingredients

  • 1 large hoagie bun, about 12 inches, divided in two and split open
  • 1 Tbsp butter, softened
  • 1 cup shredded pork roast, gravy added for moisture, heated
  • 1/2 onion, sliced
  • 1/2 bell pepper, sliced
  • 1/2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • pinch of salt and pepper
  • mayonnaise, to taste
  • 2-4 ounces of our favorite cheese, sliced
  • pickled jalapenos, chopped, to taste

Preparation

Step 1

Divide hoagie in half. Split each sandwich bun open, butter each cut side. Grill in a skillet until nicely browned. Heat broiler or oven to 500 degrees.

Warm leftover roast with pan gravy. Saute peppers and onions in olive oil and season with salt, pepper and Italian seasoning. Saute until tender but still a little crisp.

Top bottom half of each sandwich with mayonnaise, then roast, followed by peppers and onions, jalapenos and lastly the cheese. Place sandwich bottoms on foil and broil until cheese has melted and begins to bubble. Place top of bun on the sandwich and enjoy!!
