  • 2 c. cake flour
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 8 tablespoons butter, room temp.
  • 1 1/4 c. brown sugar
  • 1/4 c. pure maple syrup
  • 2 large eggs
  • 1/2 c. buttermilk
  • 1/2 tsp. maple extract
  • 1 c. mashed, ripe bananas (about 3)
  • Frosting
  • 1 8oz pkg. cream cheese, room temp.
  • 8 tablespoons butter
  • 1 16oz box confectioners sugar, sifted
  • 1 tsp. maple extract
  • 4 firm but ripe bananas, sliced
  • Optional
  • store bought caramel sauce

Step 1

Cake
Sift flour, baking powder, baking soda, and salt together into a small bowl. In another large bowl, beat together butter and sugar until light. Beat in maple syrup. Add eggs one at a time, beating well after each one.

Beat at in half of the flour mixture at a lower speed until nearly combined, then the buttermilk, then the remaining flour mixture. Do not over mix. Mix in the extract. Fold in the bananas. Divide batter among 3 well greased 9 inch cake pans. Bake at350 degrees for 25-30 minutes. Let cool.

Frosting
In a large bowl, beat cream cheese and butter until combined. Reduce speed and gradually beat in sugar. Add extract and beat until smooth.

Assemble Cake
Lay one cake layer on serving dish and spread 1/3 frosting over top. Lay 1/2 banana slices over frosting.Repeat for second layer. On third (top), just frost, no banana layer. Chill one hour until set. Just before serving, pour caramel sauce over top if desired.
