GRILLED OLD BAY SHRIMP

Ingredients

  • Ingredients for Shrimp:
  • 2 lbs jumbo shrimp in shell (24-30), thawed completely if frozen
  • and blotted dry
  • 1/4 cup vegetable or olive oil
  • 2 tbs Old Bay
  • 1/2 cup salted butter, melted
  • Ingredients for Sauce:
  • 2 cups tomato ketchup
  • Grated zest of 2 small lemons
  • Juice of both lemons (5 tbs)
  • 4 tbs prepared horseradish
  • 8 shakes Tabasco
  • 1/2 tsp sea salt or kosher salt
  • Pepper

Step 1

Sauce:

In med bowl, combine ketchup, lemon zest and juice, horseradish, Tabasco, salt and pepper. Taste and adjust seasonings, adding more horseradish if you like. Refrigerate.

Shrimp:

Heat gas grill to med-hi. Just before cooking, toss shrimp in oil to coat, sprinkle w/Old Bay and toss to coat evenly (zip lock bag is easiest). Put shrimp on grate directly over heat and cook for 6-7 min, turning once halfway thru. Shrimp are done when shells are bright pink and meat is opaque. Serve w/cocktail sauce and melted butter.
