Ingredients

  • 1 1/4 lb center-cut pork loin roast
  • RUB
  • 2 tsp paprika
  • 1 tsp garlic powder, chili powder, kosher salt and pepper
  • 1/2 tsp cinnamon and cayenne
  • GLAZE
  • 2 tbs shallots, minced
  • 1/2 cup unsweetened cranberry juice
  • 3 tbs dried cranberries
  • 1/3 cup canned jellied cranberry sauce
  • 1/4 cup maple syrup
  • 1 tbs lime juice
  • 1 tsp dijon mustard
  • Salt

Step 1

Preheat one side of grill to hi; leave other side unlit.

Saute shallots in butter in saucepan over med-hi heat until soft, 2 min. Add cranberry juice and dried berries; simmer 3 min. Whisk in cranberry sauce and syrup and simmer until slightly thickened, 7-8 min. Finish w/lime juice, dijon and salt. Remove 1/4 glaze for basting; set remaining aside for serving.

Combine spices in bowl, then rub onto roast. Grill over direct heat for 5 min, then turn roast over and grill 5 min more. Transfer pork to the unlit side of grill and roast to an internal temp or 145, about 35 more min, turning and glaze every 10 min. Remove and let rest 5-10 min.
