Broccoli Rice Casserole

Ingredients
- 1/2 c. chopped onion
- 2 tbsp butter - divided
- 2 c. hot cooked rice
- 1 can cream of mushroom soup
- 1 10 oz pkg frozen chopped broccoli - cook and drain
- 1 8 oz jar Cheese Whiz
- 1/2 c. fresh bread cubes

Preparation
Step 1
Cook and stir onion in 1 tbsp of butter in large skillet on medium heat until tender. Add rice, soup and broccoli cheese. Mix lightly. Spoon into 1 1/2 qt casserole dish. Toss remaining 1 tbsp butter, melted, with the bread cubes. Sprinkle over casserole. Bake at 350 degrees for 30-35 minutes.
