Broccoli, Mushroom and Sweet Pepper Pie

Ingredients

  • 1/2 lb chopped broccoli
  • 1 large green pepper chopped
  • 1 large red pepper chopped
  • 1 large onion chopped
  • 1 clove garlic finely chopped
  • 1/4 cup olive oil
  • 1/4 lb sliced mushrooms
  • salt
  • pepper
  • 4 eggs slightly beaten
  • 1/2 cup milk
  • 3/4 cup grated parmesan cheese
  • 3/4 cup shredded gruyere cheese

Preparation

Step 1

Cook broccoli for 3 minutes. Drain. Saute peppers, onion and garlic in oil over moderate heat, about 4 minutes. Add mushrooms and cook 4 minutes. Remove vegetables with a slotted spoon and add to broccoli. Stir in salt and pepper.

Combine eggs, milk and cheeses in medium bowl. Pour about 1/3 mixture into prepared pie shell. Spoon 1/2 vegetable mixture and pour over half of egg/cheese mixture. Repeat with remaining egg and vegetable mixtures. Bake pie on cookie sheet in 375 oven for 35 to 40 minutes. Cool on rack for 15 minutes.
