Whole Wheat Banana Nut Loaf

Ingredients
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup sugar
- 1/2 cup walnuts, chopped
- pinch nutmeg
- 2 eggs
- 1/3 cup vegetable oil
- 1 tablespoon lemon juice
- 1 cup well mashed ripe bananas

Preparation
Step 1
Preheat oven to 350. Grease a loaf pan.
Place all dry ingredients, including walnuts, into a large bowl. Stir with a fork until well blended.
In a small bowl, beat together eggs, oil, lemon juice and bananas.
Pour banana mixture into centre of dry ingredients. Stir together just until combined, when dry ingredients become moist. Pour into pan and smooth the top.
Bake for 50 - 60 minutes or until a thin knife inserted in the center comes out clean. Remove loaf from pan and cool on wire rack.
