Ingredients

  • olive oil
  • 1 1 shallot, minced
  • 1 c 1 c farro
  • 1/4 1/4 white wine
  • 3 c 3 c chicken stock
  • course salt
  • 12 oz 12 oz wild mushrooms, trimmed in 1/2 in. slices
  • red pepper flakes
  • 1 bunch 1 bunch spinach, trimmed
  • 1/4 c 1/4 c Parm (optional)

Preparation

Step 1

Cook shallot. Add farro, wine and stock. Cook 35-40 min. til tender. Meanwhile, roast mushrooms. Add mushrooms and the rest at end.
