Ingredients
- 3/4 Cup EVOO
- 2 Large cloves garlic, slivered
- 1 lb. large shrimp, tail on, shelled and deveined
- 2 large cloves garlic, minced
- 2 dried hot chili peppers
- 1 Tbsp. grated orange zest
- 1/4 cup minced fresh parsley
- Salt and freshly ground black pepper to taste
- 1 Tbsp. dry sherry

Step 1
Warm the olive oil in a large skillet over medium-low heat. Add the slivered garlic, and cook gently until soft and just starting to color, stirring occasionally. Place the shrimp in the pan in a single layer. Add the minced garlic, chili pepper, and orange zest. Cook, undisturbed for 1 to 2 minutes. When the shrimp are pink on 1 side, turn them over. Add the parsley, salt and pepper, and sherry, raise the heat slightly, and cook until all the shrimp are pink, about 2 minutes more. Serve immediately.
