Breaded Parmesan Turkey Cutlets

Ingredients

  • 4 turkey cutlets
  • 2/3 cup fine dry breadcrumbs
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried tarragon
  • 1/4 teaspoon salt and pepper
  • 1/4 cup low fat mayonnaise or yogurt

Preparation

Step 1

In a shallow dish, combine bread crumbs,Parmesan cheese, thyme, tarragon salt and pepper.

Brush both sides of cutlets with mayonnaise, then coat with crumb mixture.

Place in a greased pan and bake at 375 for 20 - 25 minutes, just until turkey is no longer pink in centre.


Notes: Can cook in a fry pan with 1 T oil for 4-5 minutes per side over medium-high heat.
