Ingredients
- 2 1//2 C. Flour
- 3 t. baking powder
- 1 t. salt
- 1 1/2 c. sugar
- 1/2 c. shortening
- 7/8 c. milk
- 2 eggs
- 1 t. vanilla
- 2 1/2 c. crushed pineapple, drained (slices can be used instead)
- 1/2 c. butter
- 2 c. brown sugar, packed

Preparation
Step 1
Preheat oven to 325 degrees.
Sift flour, baking powder and salt. Cream shortening and sugar. Add eggs, slightly beaten, into sugar mixture, mixing well. Add flour and milk alternately. Stir in vanilla last.
Melt the butter in a heavy pan or skillet. Press the brown sugar firmly into this pan. Place crushed pineapple evenly on sugar.
Pour cake mixture over pineapple. Bake for 30 - 40 minutes. Cool 5 minutes and turn out on platter.
