Ingredients
- 1 c all-purpose flour
- 1 c stone ground cornmeal
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp salt
- 2 lrg eggs lightly beaten
- 1 c whole milk
- 1/2 c butter melted & cooled slightly
- 2 cups fresh or frozen corn kernals
- 1 medium jalaeno chile finely chopped (with seeds)

Preparation
Step 1
pro 400 heat oven. generously grease bottom & side of 12 inch cast iron skillet w/ oil.
combine flour, cornmeal,sugar, baking powder & salt,
add eggs, milk & butter, stir just until dry ingredients are moistened.
stir in corn & jals, ( do not overmix)
baked 20-25 minutes.
