Ingredients
- 1/4 onion, peeled, chopped
- 2 teaspoons olive oil
- 1 pound spinach, fresh, washed
- 3 cups low sodium chicken or vegetable stock
- 6 ounces tofu
- 1 tablespoon cornstarch

Preparation
Step 1
In a large fry pan, sauté onion in olive oil over medium heat until translucent, about 4 minutes. Add spinach and cover. Stir periodically to make sure spinach wilts evenly. Cook for about 5 minutes or until all spinach is wilted slightly.
Place ingredients into the Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and quickly increase speed to 10, then to High. Blend for 3 to 4 minutes or until smooth and steaming. Serve immediately.
