Spicy Cajun Shrimp

Ingredients
- 1/2 cup mayonnaise, or salad dressing
- 2 tablespoons tomato paste
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 pound large shrimp, peeled and deveined, tails intact
- 2 tablespoons butter, melted
- 4 teaspoons cajun seasoning
- lemon wedges

Preparation
Step 1
In a small bowl, stir together mayonnaise, tomato paste, garlic and lemon juice. Cover and refrigerate until ready to serve.
Preheat broiler. Thread shrimp onto skewers. Brush both sides of shrimp with melted butter. Sprinkle both sides with Cajun seasoning. Place skewers on the unheated rack of a broiler pan.
Broil 4 to 5 inches from the heat for 2 minutes or until opaque. If desired, remove shrimp form skewers; serve with the mayonnaise mixture and lemon wedges.
