Potatoes: Twice-Baked Potatoes

Ingredients
- 4 large baking potatoes
- 1 package (3 oz.) cream cheese, softened
- 1 t. minced fresh or frozen chives
- 4 T. butter
- 1/2 c. grated Parmesan cheese
- 1 T. sour cream
- 1 egg
- 1/2 t. salt
- dash pepper
- 8 slices bacon, cooked, drained and crumbled
- 1 cup cheddar cheese
- Green onions, sliced, split in half

Preparation
Step 1
Scrub potatoes well; wrap potatoes in foil and place into 400 degree oven for 1 hour or until tender.
When cool enough to handle, split potatoes lengthwise and scoop out potato into electric mixer bowl.
Add remaining ingredients, except egg, and beat well.
Add egg and beat until smooth.
Fill potato shells; sprinkle cheddar cheese green onions and bacon if desired.
Bake at 375 degrees until puffed and lightly browned.
