Ingredients

  • 1 lb (16oz) linguine, cooked and drained
  • 1 lb scallops
  • flour (add seasonings of choice)
  • 2 tbsp. olive oil
  • 4 tbsp. garlic butter
  • 1 tbsp. thyme

Preparation

Step 1

cook linguine according to package instructions. drain and set aside.

coat scallps on all sides with pan searing flour. pat off excess

heat skillet on medium-high

pour olive oil to lightly coat skillet. wait until oil faintly smokes before adding scallops.

place scallops carefully into hot oil. when sides have changed color about 1/3 - 1/2 way up (approx. 2-3 mins), turn carefully.

reduce heat and continue to cook until internal temperature reaches 130 degrees, about 4-6 mins.

add garlic butter/spread, basting scallops with melted spread as they cook. cook until internal temp reaches 140 degrees, about another 2-3 mins. add lemon juice and parmesan and garnish with thyme.

serve over linguine.
