• 2 C sugar
• 1 1/2 C olive oil
• 2 eggs
• 3 C diced, unpeeled apples
• 1 C chopped nuts
• 3 C flour
• 1 t salt, 1 t cinnamon, 1 t baking soda, 1 t vanilla

Step 1

Preheat oven 350

Mix first 3 ingredients with electric mixer.

Add remaining ingredients in order.

Place all ingredients in bundt pan and bake 1 hr. or until toothpick comes away clean.

Invert over cake plate to remove from pan.
