Apple Nut Muffins

Ingredients

• 2/3 C apple juice or milk
• 1/2 C vegetable oil
• 1 tsp vanilla
• 1 egg
• 2 C flour
• 1/4 C sugar
• 1/4 C brown sugar
• 1 T baking powder
• 1/2 tsp salt
• 1/2 C chopped nuts
• 1 C chopped peeled apple

Preparation

Step 1

Pre heat oven to 400; grease of liine muffin tin.

In a large bowl, beat juice, oil, vanilla and egg. Stir in flour sugars, baking powder and slat. Mix just intul moistened. Stir in nuts and apple.

Spoon batter into tin, filling cups 3/4 full. Sprinkle with sugar cinnamon mix. Bake in overn for 20 minutes or until golden brown.
