Ingredients

  • 2 1/2 t kosher salt
  • 1 t pepper
  • 2 t veg oil
  • 1 t baking soda
  • 1 3# tenderloin, trimmed and tied at 1 1/2" intervals
  • 3 slices bacon

Step 1

Turn all burners to hi, cover and heat grill until hot, about 15 min. Turn primary burner to med and turn off other burners. (Maintain temp of grill @300)
Clean and oil cooking grate. Place roast on hotter side of grill and cook until lightly browned on all sides, about 12 min. Slide roast to ccoolere side of grill, arranging so roast is about 7" from heat source. Place skewered bacon on hotter side of grill. (Bacon should be 4-6" from roast. If flareups are large or frequent, slide bacon 1" closer to roast.
Cover and cook until beef registers 125, 50min-1 1/4hours. Transfer to board and tent with foil for 20 min. Cut 1/2" thick
