Balsamic-Honey Glazed Salmon

Ingredients

  • 4 Salmon fillets
  • 3 minced garlic cloves
  • 1 Tbsp. white wine
  • 1 Tbsp. honey
  • 1 teas. olive oil
  • 1/4 cup balsamic vinegar
  • 2 1/2 Tbsp. Dijon mustard
  • salt and pepper to taste
  • 1/2 Tbsp. chopped fresh oregano

Preparation

Step 1

Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with no-stick cooking spray.

In a small saucepan over medium heat, heat olive oil and cook garlic until soft (about 3 minutes). Mix in wine, honey, vinegar, mustard, salt and pepper. Simmer for about 3 mins.

Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze and sprinkle with oregano.

Bake for 10-14 mins, or until meat flakes easily with a fork. Brush fillets with remaining glaze and season with salt & pepper. Use a spatula to transfer fillets to a serving platter, leaving the skin behind on the foil.
