Sauted Green Beans


Lightly sauted fresh green beans keep their crispiness and flavored with olive oil and garlic

  • 1 1/2 to 2 lbs of fresh green beans
  • 1/4 C olive oil
  • 3 to 4 cloves garlic
  • 3 to 4 anchovies, chopped
  • 1/2 C green olives
  • 1/2 t crushed red pepper


Servings 1


Step 1

Blanch green beans in very salty water until crisp. Drain and cool in ice water. Heat oil in large skillet, add garlic, anchovy and saute. Add green olives and green beans, salt to taste. Continue to saute until green beans are hot about 4-6 minutes.
