Tomato Cucumber Salad

This is a very refreshing salad for a picnic or warm summer day. The Feta and Balsamic give it more depth than it appears. Quick and easy too.
Ingredients
- 6 Roma Tomatoes
- 1 cucumber
- 3 scallions
- 1/4 basil leaves
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 4 tablespoons Feta, crumbled (plain)
- Salt
- Pepper

Step 1
Chop the Tomatoes into 1/2 in sized chunks. I tend to quarter them, then remove the flesh (seeds and wet parts). This keeps the salad from getting to runny.
Peel and chop the Cucumber into similar size bites. I also remove the seeds here. Quarter the Cucumber lengthwise, then simply 'slice' away the seeds.
Slice the Scallion as thinly as possible. I do cross-cuts to make the piece a little longer, but do what you are comfortable with.
Slice the Basil into long and thin strips.
Combine everything in a large bowl. Mix gently and then taste to determine how much salt/pepper you need. I find that the Feta tends to be salty already, so I usually add more Pepper than Salt, but this is your preference.
