There's nothing fishy about it, literally and figuratively: Farm-raised catfish is the perfect catch, especially now, during peak harvesting season.
Each three-ounce cooked serving has only 120 calories and five grams of fat, and offers a respectable 19 grams of protein. The extremely mild flavor makes it perfect for all kinds of seasonings, and the firm texture lends itself to all sorts of preparations. A few quick examples:

Step 1
* Dip skinless catfish fillets in skim milk, then in a mixture of Parmesan cheese, bread crumbs, pepper, paprika, oregano and basil to coat. Drizzle with melted margarine and bake.
* Flake broiled catfish on top of tomato-rice salad seasoned with soy sauce, olive oil and lime, or onto mixed greens with fresh vegetables.
* Grill or broil fillets and serve with salsa.
* Broil seasoned nuggets of catfish and dip into sweet-and-sour sauce.
* Mix flaked poached fillets with low-fat cream cheese and mayonnaise, chopped onion, lemon juice and Worcestershire sauce for a creamy dip.
* Lightly brush fish with tomato sauce and sprinkle with Creole seasonings before broiling or grilling.
